Cooking tips

Pre heat your oven to 200 degrees
Season the meat,
Seal the meat and fat all over in a hot dry pan.

Transfer to oven and Cook 6 to 7 minutes on the fat then turn for 1 minute more on the meat side for medium rare

Leave to rest in a warm place at least 5 minutes

To ensure perfect cooking and measuring internal temperatures, we recommend a meat thermometer.
