A Juicy Cut with Depth of Flavour

Our Lamb has a slight fat covering which keeps the meat moist and tender, also adding some great flavours as the joint cooks. The cut lends itself to individual roasts to serve on each guests plate. Reared on our farm in Shropshire. The flock graze on lush meadows which is reflected in the array of flavour our lamb boasts.

Cooking tips

Pre heat your oven to 200 degrees.
Season the rump prior to roasting

In a hot pan with some oil and salt in. Sear the lamb all over concentrating on the layer of fat rendering this to a rich golden colour.

Place in centre of oven and roast for approximately 15 minutes reaching a core temperature of minimum 56 degrees

Remove from oven and place onto a tray and cover with foil.
Then resting for a minimum of 10 minutes before carving.

To ensure perfect cooking and measuring internal temperatures, we recommend a meat thermometer.
