The perfect joint for roasting, with its great marbling and extreme tenderness. Leaving the meat on the bone, adds to the flavour whilst cooking. This is great served as the centrepiece to a roast and sliced cold for sandwiches and buffets.

Cooking tips

Place in the centre of the oven and roast for 20 minutes at 200°C, then reduce the temperature to 180°C . Continue roasting for 15 minutes per 500g reaching a core temperature of minimum 58°C for a medium rare roast.
Remove from the oven, put onto a clean tray and cover with foil. Rest for at least 20 minutes before carving.


We recommend allowing 250gms – 350 gms per person with a minimum weight of 1kg (Joints don’t roast so well under this weight)
