Cooking tips

Preheat your over to 180C. Place the joint skin side up then place in the centre of the oven and roast for 25 minutes per 500g reaching a core temperature of 72C.

Cover with foil and rest for at least 20 minutes before carving.

To ensure perfect cooking and measuring internal temperatures, we recommend a meat thermometer.
